Recipe: Tostones

Ingredients:

Several green plantains
Light oil, for frying
Salt, to taste

Instructions:

Peel the plantains (should be difficult for good green plantains). Running water helps. Cut in 1" thick slices. Place in saltwater to prevent them from turning brown. Before gently placing them in the hot oil remove as much water from them as possible. Fry in hot oil, about 3 minutes until they start browning and are firm. Drain well. While still warm, gently flatten the slices to 1/2" thick or thinner. Re-fry the plantains until golden brown & crispy. Drain once more, salt to taste. Serve immediately as a snack or side dish.
